Baked Vegetables

 

Ingredients -
2 Baby Eggplants, cut into 1/2" half-moons
2 Zucchini, cut into 1/2" half-moons
2 Summer Squash, cut into 1/2" half-moons
1/2 Sweet Onion, sliced into 1/2" strips
1 Red Bell Pepper, cut into 1/2" strips
2 Medium Sweet Potatoes, peeled and cut into 1/2" half-moons
 
Preparation:

1. Turn the oven to 425 degrees and preheat.

2. In a large bowl, combine all of the ingredients and toss well to coat.

3. Transfer the mixture to a baking sheet and bake for 45 minutes, turning the vegetables twice.
