Eggplant Bake

Eggplant slices dredged in egg and breadcrumbs. Breaded eggplant fried in hot oil until golden brown on both sides. Eggplant slices topped with sliced onion, sliced vine-ripened tomatoes, grated fresh Parmesan cheese, crumbled feta cheese and Muenster cheese slices. Casserole style dish is baked in hot oven until cheese is melted and golden.

Ingredients -

1 tablespoon Olive Oil
2 Eggs, lightly beaten
1 cup Italian Seasoned Dry Bread Crumbs
1 Eggplant, sliced into 1/2 inch rounds
Salt to taste
1 Medium White or Yellow Onion, sliced
2 Vine-Ripened Tomatoes, sliced
1 cup grated Fresh Parmesan Cheese
1 cup Crumbled Feta Cheese
4 Muenster Cheese Slices, torn into strips

 
Preparation:

1. Turn the oven to 350 degrees and preheat.

2. Spray nonstick cooking spray on a 13 x 9 inch baking dish.

3. Add the oil to a skillet and heat over medium heat.

4. Place the eggs in one bowl and the bread crumbs in a separate bowl.

5. Dip the slices of eggplant first in the egg, then bread crumbs and coat evenly.

6. Fry the eggplant in the preheated skillet until golden brown on both sides.

7. Season with salt and pepper and drain on a plate lined with paper towels.

8. Layer the eggplant, onion, tomatoes, Parmesan cheese, and feta cheese on prepared baking dish. Top with a final layer of Muenster cheese slices.

9. Bake until the cheese is melted and bubbly, which takes about 30 minutes.

Storing Eggplant
Eggplants that are stored in a dry, cool place should be used in a day or two. To store longer, place eggplant in an open plastic bag or paper bag and place in the crisper drawer in the refrigerator. Stored this way, eggplant will last up to one week. For later use, steam or blanch eggplant, place in an airtight container and place in the freezer for six to eight months.

Italian Seasoned Dry Bread Crumbs

Italian seasoned dry bread crumbs can be found in grocery stores with the plain dry bread crumbs. The Italian seasoning refers to the addition of some or all of the following: dried Parmesan cheese, dried parsley, dried oregano, dried basil, garlic powder, and onion powder.
