1. Turn the oven to 350 degrees and preheat.
2. Spray nonstick cooking spray on a 13 x 9 inch baking dish.
3. Add the oil to a skillet and heat over medium heat.
4. Place the eggs in one bowl and the bread crumbs in a separate bowl.
5. Dip the slices of eggplant first in the egg, then bread crumbs and coat evenly.
6. Fry the eggplant in the preheated skillet until golden brown on both sides.
7. Season with salt and pepper and drain on a plate lined with paper towels.
8. Layer the eggplant, onion, tomatoes, Parmesan cheese, and feta cheese on prepared baking dish. Top with a final layer of Muenster cheese slices.
9. Bake until the cheese is melted and bubbly, which takes about 30 minutes.
