1. Turn the oven to 400 degrees and preheat.
2. Spray a cookie sheet with nonstick cooking spray.
3. In a shallow dish, whisk together the flour, salt and pepper.
4. In another shallow dish, whisk together the garlic powder, egg and milk.
5. In a third shallow dish, place the bread crumbs.
6. Dip each slice of eggplant first into the flour mixture, next into the egg mixture, lastly into the bread crumb mixture coating all sides.
7. Place each slice on a paper plate.
8. Add the oil to a large skillet and heat over medium-high heat.
9. Fry the eggplant in small batches until golden brown, which takes about 2 minutes per side.
10. Let drain on paper towels, while frying up the remaining batches.
11. Arrange the slices on the prepared baking sheet and sprinkle with mozzarella and parmesan cheese.
12. Bake until the cheese is melted, which takes about 10 minutes.
13. Let sit for 2 minutes before serving.
