Ingredients -
1 Roasted Eggplant, skin removed
6 ounces Plain or Marinated Feta Cheese
1 Garlic Cloves, minced
2 teaspoon Tahini
2 tablespoons Lemon Juice
2 tablespoons Olive Oil
1 teaspoon Honey
Salt and Black Pepper, to taste
Preparation:
1. Add all of the ingredients to a blender or food processor and blend until smooth.
2. Taste for seasoning and adjust the salt and pepper as desired.
3. Serve the mixture drizzled with olive oil.
