Greek Eggplant

Sautéed onion, garlic, and ground chuck combined with tomato sauce, dried oregano, dried basil, cinnamon, coarse salt, and fresh ground black pepper. Eggplant slices are roasted under the broiler and placed into baking dish. Meat sauce is spooned evenly over eggplant slices and topped with cream sauce featuring butter, all-purpose flour, whole milk, coarse salt, fresh ground black pepper, and egg. Parmesan and Greek cheese are sprinkled over top and casserole is baked in hot oven.

Ingredients -

Meat Sauce:
1-1/2 pounds Ground Chuck
1 cup Onion, chopped
2 Garlic Cloves, chopped
1/2 tablespoon Oregano
1 teaspoon Basil Leaves
1/2 teaspoon Cinnamon
Salt and Pepper to taste
2 (8 ounces each) cans Tomato Sauce

1 cup Parmesan Cheese
1 cup grated Fresh Greek Cheese
2 Eggplants

Cream Sauce:
4 tablespoons Butter
4 tablespoons All- Purpose Flour
2 cups Whole Milk
1 teaspoon Coarse Salt
1 teaspoon Fresh Ground Black Pepper
2 Eggs, beaten

 
Preparation:

1. For the meat sauce, add the onion, garlic and ground chuck to a large heavy pot and brown.

2. Add the tomato sauce, oregano, basil, cinnamon, salt and pepper and mix well.

3. Allow to simmer while you are preparing the cream sauce.

4. For the cream sauce, melt the butter and flour together, stirring constantly.

5. Add the milk and cook until thickened, stirring constantly.

6. Add the eggs, salt and pepper and mix well.

7. In a small bowl, combine the cheeses and blend well.

8. Slice the eggplant in half, then slice into thin half circle slices.

9. Brush the slices with melted butter and sprinkle lightly with salt.

10. Place the slices on a baking sheet and broil for 4 minutes.

11. Lay the slices, overlapping, in the bottom of a casserole dish that you sprayed with nonstick cooking spray.

12. Layer meat sauce, cream sauce and cheese mixture.

13. Bake for 35 to 40 minutes at 350 degrees.

When you are shopping at the market for an eggplant, it’s important to know what you are looking for. Good eggplants do not have any brown spots on the skin, they are shiny and smooth and the stem is free of mold. The skin bounces back when gentle pressure is applied and it seems very heavy for its size.

Ground Chuck

Ground chuck is chuck steak that has been ground. Ground chuck can be found in most supermarkets and is 80% lean, 20% fat. You can substitute for any grade of ground beef, keeping in mind that the higher the fat content the more the fat burns off and the less volume of meat is left.
