Grilled Eggplant and Mozzarella

Eggplant slices are grilled over hot coals and basted with mixture of extra-virgin olive oil, balsamic vinegar, finely chopped garlic, dried oregano, dried basil, coarse salt and fresh ground black pepper. Eggplant topped with mozzarella cheese and grilled until cheese melts.

Ingredients -

1 Large Eggplant, cut into 1/2 inch slices
1/2 cup Extra Virgin Olive Oil
3 tablespoons Balsamic or Red Wine Vinegar
2 Garlic Cloves, finely chopped
1 teaspoon Dried Oregano
1 teaspoon Dried Basil
Coarse Salt
Fresh Ground Black Pepper
6 ounces Mozzarella Cheese, thinly sliced

 
Preparation:

1. Sprinkle the top and bottom of the eggplant with salt and let sit on paper towels for 2 hours.

2. Rinse, pat dry and place on a BBQ grill.

3. Whisk together the olive oil, vinegar, garlic, oregano, basil, salt and pepper in a bowl and baste the eggplant spices.

4. Turn and baste frequently until lightly browned, about 8 minutes.

5. Place 1 slice of mozzarella on top of each slice of eggplant and grill for 2 minutes, or until the cheese melts.

 


Eggplant Recipe Tip -
Bitterness in Eggplant
The bitterness in eggplants increases as they age. Instead of using one larger eggplant, select two smaller, younger eggplants. Look for male eggplants that have fewer bitter seeds than their female counterparts. Male eggplants have a shallow, round indentation on the bottom while female eggplants have a deep indentation that looks like a dash.
