1. Sprinkle the top and bottom of the eggplant with salt and let sit on paper towels for 2 hours.
2. Rinse, pat dry and place on a BBQ grill.
3. Whisk together the olive oil, vinegar, garlic, oregano, basil, salt and pepper in a bowl and baste the eggplant spices.
4. Turn and baste frequently until lightly browned, about 8 minutes.
5. Place 1 slice of mozzarella on top of each slice of eggplant and grill for 2 minutes, or until the cheese melts.
