Grilled Italian Eggplant Rollatini with Herbed Goat Cheese

Eggplant slices are grilled over hot coals and basted with mixture of olive oil, red wine vinegar, fresh lemon juice, minced fresh oregano, minced fresh basil, coarse salt, and fresh ground black pepper. Grilled eggplant slices topped with mixture of minced shallots, mild goat cheese, minced fresh basil, minced fresh oregano, fresh lemon juice, coarse salt and fresh ground black pepper. Eggplant slices are rolled and can be served hot or allowed to cool to room temperature.

Ingredients -

3 Italian Eggplants, sliced into 1/4" thick vertical strips
1/2 cup Softened Mild Goat Cheese
1 Shallot, minced
2 tablespoons minced Fresh Basil
2 tablespoons minced Fresh Oregano
Zest of 1 Fresh Lemon
Coarse Salt
Fresh Ground Black Pepper

Brushing Sauce:
3 tablespoons Olive Oil
2 tablespoons Red Wine Vinegar
2 tablespoons Fresh Lemon Juice
1 tablespoon minced Oregano
1 tablespoon minced Basil
Coarse Salt
Fresh Ground Black Pepper

 
Preparation:

1. Add the eggplant to a colander and sprinkle with salt and allow to sit for 20 minutes.

2. Rinse off and dry with paper towels.

3. Prepare the BBQ grill.

4. Combine the olive oil, vinegar, lemon juice, oregano, basil, salt and pepper in a small bowl and whisk well.

5. Baste both sides of the eggplant with the brushing sauce.

6. Grill 5 minutes each side.

7. In another bowl, combine the shallot, cheese and spices and mash until smooth.

8. Remove the eggplant from the grill and spread each with 1 tablespoon of the goat cheese mixture and roll closed.

9. Serve immediately or at room temperature.

 


Eggplant Recipe Tip -
Marinating Eggplant
Eggplant is very absorbent and will take on the flavor of other foods. Marinating eggplant for several hours will create a more intense flavor. To better incorporate and marry flavors in baked dishes, mix the ingredients together ahead of time or prepare the dish and let it sit overnight. Leaving the dish in the refrigerator for 24 hours will also decrease the bitterness of the eggplant.

Shallots

The shallot is in the onion family, although it is structure more like garlic, having multiple cloves that make up a head. The shallot has similar flavor to sweet onions, somewhat milder than white or yellow storage onion.
