1. Thaw the bag of marinated vegetables in the fridge overnight.
2. Slice the French rolls in half.
3. Whisk together the mayonnaise, lemon juice and crushed garlic.
4. Drizzle the mayo blend on the bottom of each roll.
5. Layer the sandwich, arugula first, 1/4 eggplant mixture and top with feta.
6. Other half roll on top and voila.
