Ground Turkey Moussaka

Onion, green bell pepper, allspice, cinnamon, smoked paprika, garlic and mint sautéed in olive oil. Ground turkey is stirred in and cooked until brown. Tomatoes and tomato paste are added and the mixture is simmered over very low heat. Roasted eggplant dip is stirred in and the dish is seasoned with coarse salt and fresh ground black pepper to taste. Dish is topped with feta cheese and placed under broiler briefly to melt cheese. Garnished with mint and served hot.

Ingredients -
2 tablespoons Olive Oil
1 Large Onion, diced
2 Green Bell Peppers, cored, diced
1/8 teaspoon Allspice
1/4 teaspoon Cinnamon
1/2 teaspoon Smoked Paprika
2 Garlic Cloves, minced
2 tablespoons chopped Fresh Mint
1/3 cup Crumbled Feta Cheese
Coarse Salt, to taste
Fresh Ground Black Pepper, to taste
1 (12 ounces) jar Roasted Eggplant Dip
2 tablespoons Tomato Paste
1 (14.5 ounces) can Diced Tomatoes
1 pound Lean Ground Turkey
 
Preparation:

1. Add the oil and the next 7 ingredients to a skillet and sauté until the onion is tender.

2. Add the turkey and brown, then add the tomatoes and tomato paste.

3. Bring mixture to a simmer cover pan reduce heat cook 10 minutes.

4. Preheat the broiler.

5. Add the eggplant dip into the turkey mixture and simmer for another 5 minutes.

6. Season with salt and pepper, to taste.

7. Remove the skillet from the heat.

8. Top the dish with feta.

9. Place it under a broiler and lightly brown the cheese, being careful not to burn.

10. Serve with a mint garnish and enjoy.

Smaller Eggplants

Smaller eggplants generally are less than bitter than larger ones because they have less seeds. However, if you soak eggplant in water and salt it prior to cooking, much of the bitterness is eliminated.

Roasting Eggplant

Eggplant can be roasted in oven or on the grill in 30-60 minutes. Remove the top stem from the eggplant and place on a baking sheet or on the grill. The eggplant can optionally be brushed with cooking oil before placing in the oven. The eggplant is done when the skin is charred and the eggplant is soft.
