1. Add the oil and the next 7 ingredients to a skillet and sauté until the onion is tender.
2. Add the turkey and brown, then add the tomatoes and tomato paste.
3. Bring mixture to a simmer cover pan reduce heat cook 10 minutes.
4. Preheat the broiler.
5. Add the eggplant dip into the turkey mixture and simmer for another 5 minutes.
6. Season with salt and pepper, to taste.
7. Remove the skillet from the heat.
8. Top the dish with feta.
9. Place it under a broiler and lightly brown the cheese, being careful not to burn.
10. Serve with a mint garnish and enjoy.
