Herb Grilled Vegetables

 

Ingredients -

1/4 cup Melted Butter
1-1/2 teaspoons Onion Powder
1-1/2 teaspoons Parsley Flakes
1/2 teaspoons Basil
1/2 teaspoon Garlic Powder
1/4 teaspoon Salt
Fresh Ground Black Pepper, to taste
4 (1/2-inch thick) Eggplant Slices
1 Medium Zucchini, cut into halves lengthwise
1 Medium Tomato, cut into halves crosswise

 
Preparation:

1. In a medium bowl, combine the first 7 ingredients and mix well.

2. Brush the butter blend over the vegetables.

3. Grill the zucchini and eggplant for 5 minutes over hot coals and then turn over.

4. Add the tomatoes to the grill, cut side facing up.

5. Continue to grill all the vegetables until they are fork tender, basting often with the butter blend.
